Peach Blueberry Crisp

Oh how I love summer and everything that encompasses it, but unfortunately it is that time of year again summer is ending and my favorite fruits will soon be out of season!  So every year at this time when fruit is the ripest and the cheapest, I always make some sort of cobbler or crisp recipe.  This recipe is for a delicious Peach Blueberry Crisp made with fresh peaches and blueberries!   Huge props to one of my favorite FoodNetwork chefs, Ina Garten who created this recipe.  It’s super simple and really yummy!!

Here is what you’ll need:

For the filling

  • 2 lbs of firm ripe peaches
  • 2 teaspoons grated lemon zest
  • 2 tablespoons of fresh lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 1/2 cup fresh blueberries

For the Crumble

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1 stick cold unsalted butter, diced

Preheat oven to 350 degrees.

Start of by immersing the peaches in boiling water for 30 seconds to 1 minute, take out and peel off the skins.  Slice the peaches into thick wedges and place in a large bowl.IMG_3689 #1

Gently fold in the blueberries and allow mixture to sit for 5 minutes. IMG_3700 #1

Spoon the mixture in ramekinsIMG_3705 #1

For the topping, combine the flour, granulated sugar, brown sugar,salt and cinnamon.IMG_3702 #1

Put diced butter into the bowl of electric mixer fitted with a paddle attachment.  Add flour mixture and mix on low-speed until butter is the size of peas.IMG_3704 #1

Sprinkle mixture evenly over the fruit. Place ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes until the tops are browned and crisp and the juices are bubbly.IMG_3716 #1
