Happy Valentine’s Day everyone! Since today is a day for splurging, I thought I’d share a recipe for one of my favorite desserts, cannoli. I guess you could say that I have a slight obsession with them, I don’t eat them often, but when I do, I savor every bite! This recipe is slightly different from my earlier cannoli post, these are strawberry ricotta cannoli! The filling is made with ricotta, whip cream, strawberries and chocolate chips. They are super easy, surprisingly light, and really delicious! If you love cannoli as much as I do, you must give this recipe a try!
Here is what you’ll need:
- 1 cup of ricotta cheese
- 1/2 cup whipping cream
- 1/4 cup sugar
- 1 1/2 teaspoons vanilla
- 1/3 cup mini chocolate chips
- 1/2 cup chopped strawberries
- 8 pre-made cannoli shells
- 6oz melting chocolate (for dipping shells in)
For the shells:
Start off by melting chocolate in microwave, double boiler, or chocolate melting pot. Once chocolate has melted, dip each end of the shells into the chocolate and place on wax paper to cool and harden.
For the filling:
Stir together ricotta cheese, sugar, and vanilla.
In a small chilled bowl, (I put mine in the freezer for 15 min). Beat whipping cream with hand mixer, until soft peaks form.
Gently fold whip cream, mini chocolate chips, and strawberries into ricotta mixture.
Time to start filling them. Take a large Ziploc storage bag and put into a tall container. Fold the top of the bag over the edge of the container, and spoon filling into bag. Once bag has been filled, cut the corner with scissors, now you have a piping bag.
Take your shells with, and fill in each end.
And there you have it, a cannoli love affair!
